Ummukulsu Chicken


Ummukulsu Chicken

1.Chicken-1 1/4 kg

Salt-1 tsp

Lime juice-1 tbsp

Remove the skin and make gashes on the chicken and apply salt and lime juice and set aside.

2.For dry roasting

Cumin jeera-1 tsp

Fennel Seeds 2 tsp

Pepper Corns-3/4 tsp

Whole Coriander -2 tsp

Dry Red Chilly-5

Dry roast all the above ingredients and powder it.

3.Onion-1/2

Ginger-1/2”piece

Garlic-3-4 big (Chinese ones)

Tomato-1/2

Coriander leaves-1/4 cup

Green chillies-2

Add all the above ingredients to the powdered masalas and grind it to a paste without adding any water.

4.Turmeric powder-3/4 tsp

Garam Masala-1/2 tsp

Chilli Powder-1 tbsp

Salt -1/2 tsp

Coconut oil-2 tsp

Add the above ingredients to the ground masala paste and mix in.

This is the marinade .Apply 3/4 th of the marinade to the set aside Chicken .Tie the legs of the Chicken together (which I forgot)with some threads or twine.Cover it with a cling wrap and refrigerate it overnight or for at least 4-5 hours .

5.Boiled Eggs-2

Onion-1

Coconut oil-2 tbsps

Curry leaves-2-3 sprigs

Cloves-2

Carrot-1/2

Cucumber-1/2

Cabbage/Lettuce-2 leaves

Heat 2 tbsps oil in a cooker and put the curry leaves.Fry the Whole Chicken on high heat (I kept this on the big burner)till browned(around 2 minutes).Repeat with the other side too.Now close the pressure cooker and place it on the medium burner on high heat and off the stove when a whistle comes.

Once cooled, open the cooker.U can see some water and all the oil floating.Remove the Chicken to a plate.Remove a tbsp of the oil from the cooker and fry the Chicken for a minute or two.(It’s optional to fry it again,I just wanted to give it a crispy outer layer).Set this aside.

Sauté the sliced onions in this oil till translucent .Add the set aside marinade and sauté.Add the juices left in the cooker to this and sauté till dried.Fill this mixture along with an egg to the tummy of the fried Chicken after untying the legs.

Place the two cloves on the other egg to resemble eyes.Cut out a small triangle from a piece of the sliced carrot and fit in to resemble the lips.Keep the Chicken onto a plate ina sitting position.Place this egg on to a skewer and gently place it on the top of the Chicken.Make a scarf using an aluminum foil to resemble the thattu and place it over the egg as seen in the picture.

Beautiful Ummukulusu Chicken is ready.Decorate with sliced veggies and serve with some Quboos and Mayonnaise or Mint Raita
