Mixed Fried Rice Recipe
1.Basmati Rice-2 cups
Oil-1 tbsp
Soak the rice in water for 15 minutes & drain.
2.Water-3 cups
Chicken stock-2 cubes
Pepper pwdr-1 1/2 tsp
Salt -1/2 tsp
Oil-2 tsp
In a pressure cooker add all the above ingredients and rice & cook till 1 whistle.
Note: I usually cook the rice in a pot .Once boiled,set aside for 5 minutes and drain . And add the stock cubes while sautéing the vegetables .
3.Eggs-4
Pepper powder -1/2 tsp
Salt-2 pinches
Milk-1 tbsp
In a bowl beat together all the ingredients with a fork.
Heat a big nonstick pan with 2 tsp oil and scramble the eggs until done.Remove and set aside.
4.Boneless Chicken-100 gm
Chilli powder-1/4 tsp
Soya sauce-1 tsp
Marinate the chicken thinly sliced with the above ingredients for 10 minutes.
In the same pan and 2 tsp oil and fry the chicken until cooked and remove to a bowl.
4.Mushrooms-100 gm
Sausages-5
Add in a tsp of oil to the pan and add the mushrooms sliced and sauté till cooked.Remove.
Boil the sausages in another vessel adding some water and drain. Then slice it.
5.onions-2 big( chopped)
Sauté this in 3 tbsp oil.
4.ginger garlic paste-1 tbsp
Green chillies-4 chopped
Add this &saute.
5.carrot-1(chopped)
Capsicum -1(chopped)
Cabbage-1cup(chopped)
Beans-1 cup(chopped)
Corn/peas-1/2 cup
Salt -1/4 tsp
Pepper powder-1 1/2 tsp
Add to the above the sliced beans and carrots ,pepper and salt and sauté & cover with a lid and cook until tender.Add in the remaining vegetables add sauté till cooked . Add in the sausages sliced and sauté for few minutes.
6. Soya sauce-1 1/2 tbsp
Thai chilli sauce-1 tbsp
Chinese vinegar-1/2 tbsp
Chilli garlic sauce-1 tbsp
Green chilli sauce-1/2 tbsp
Add to the above & cook for a minute. now add the cooked rice ,chicken and scrambled eggs & mix in.adjust seasonings.garnish with chopped spring onion leaves & serve. Mixed Fried Rice is ready.
Note : u can add shrimps/prawns cooked instead of sausages if you want.
