Sukhiyan (yields 30-35 Sukhiyans)
1.Cherupayar/moong dal(whole)-1 cup
Soak this in water for 5-6 hrs or overnight & pressure cook it for a whistle
2.Jaggery-1/2 kg
Water-1/4 -1/2 cup
Heat together & boil till it's completely dissolved .Strain this into a kadai.heat the mixture till it forms one string consistency
3.coconut scraped-1 big
Add to the above & cook till almost all the water dries.add the cooked moong (discarding any water)
Add 1/2 tsp cardamom powder & cook till all water dries up.Allow the mixture to cool down.shape into balls.will get 25-30 balls.
4.maida-1 1/2 cup
Add enough water to make a smooth batter which is neither too thick nor too runny.the batter should easily coat the balls.Dip each ball in batter & deep fry in hot oil,4-5 at a time till lightly browned .Drain on tissues.
