Kumbilappam

1.Cooked Jackfruit-1 cup

Or Chakkavaratti-3/4 cup

2.Grated coconut-3/4 cup

Jaggery grated-1/2-1 cup(Adjust according to your sweetness)

Rice powder (fine)-1 cup

Salt-a pinch

Cardamom-3-4

Dry Ginger powder(Chukku )-1/4 tsp

Cumin /jeera powder-1/2 tsp

Powder the cardamom,chukku and jeera In a mixie.

In a bowl mix all the above ingredients setting aside 1/4 cup rice powder and 1/4 cup jaggery and mix with your hands,till it resembles bread crumbs.

Now add the Chakka varatti/ cooked Chakka and knead in.(If you are using Chakkavaratti,reduce the amount of jaggery as It’s already sweetened)

3.Milk-2-3 tbsps

Water as required

Add milk and water as required so that

to make a batter which is not too thick and not too loose.Add the rice powder if it’s too sweet.

Check for sweetness and add the jaggery if you want it more sweet .

3. Fresh Vazhana ela/Bay leaves-as required

Clean the vazhana ela with water and then wipe it dry with a kitchen towel.

Make a cone as shown in the pictures and prick it with a toothpick .

Fill the prepared cones with the batter/dough and cover the top with left out corner of the leaf.

Now place this in a steamer filled with water and steam for 10-15 minutes. It’s done if a knife/toothpick inserted at the center of an Appam comes out clean.Kumbilappam is ready.Remove and serve warm.

U can freeze these indefinitely and steam it whenever you want it and use.

Notes

If you don’t get vazhana ela you can use banana leaves or parchment paper as an alternative. In that case you should spread the dough like a n Ela Ada and then steam.
