Kerala Spicy Mixture getting re
Special Mixture/Kerala Spicy Mixture
1.Besan/Chickpea flour-500 gm
Rice powder-1/2 cup(optional)
Chilli powder-1 tsp
Asafoetida powder-3/4 tsp
Salt-2 tsp
Hot water as required
In a vessel add all the above ingredients and mix with a spoon.
Add enough hot water to make a dough.Heat enough oil in a kadai/cheenachatti to deep fry the sev.Put the noolappam/small holes achu in the noolappam maker and add a part of the dough into it and press this over hot oil (preferably coconut oil) and make the sev as a shown in the picture.After few minutes turn this over and fry it from the other side too.Once crisp (no need to brown) Remove and drain on tissues.Repeat till all the dough is used up.Crush this & Set aside in a large urali/ vessel (which can be heated as we will be placing it over the gas for mixing afterwards).
2.Raw Peanuts-400 gm
Pottu Kadala -100 gm
Cashews-15(splitted)
Raisins-15
Curry leaves-5-7 sprigs
Fry the curry leaves and add to the above. Then fry the cashews & Raisins & Remove. Then fry the pottu Kadala & remove. Then fry the peanuts in 2-3 batches and drain.Add these fried ingredients to the fried sev set aside.
3.Potato chips-big packet(I used Lays salted ones.U can fry 2-3 big potatoes sliced in hot oil and use)
Chilli powder-4-6 tsps
Salt to taste
Add the potato chips to the fried sev too.Now Sprinkle the Chilli powder & salt over the mixture and place this vessel over low heat and stir till the Chilli powder & salt is well coated and the mixture is heated through. The special Kerala mixture is ready.Once cooled store in airtight containers
