Kerala Rice Puttu


Kerala Rice Puttu Recipe

1.Rice powder-1 cup ( roasted rice/puttu powder)

Salt to taste

Water or Coconut water as required

Coconut grated as required

In a bowl mix the rice powder and salt.Some like to add 1/4 cup grated coconut to this mixture first and mix in. This is optional.I usually don’t add coconut to this.Add water little by little and mix in with your hand to make a crumble mixture.Cover & Set this aside for 10-15 minutes .In the small bowl of your mixie put some of the the set aside puttu mixture & pulse for a few seconds.Remove it to another bowl.Do this until all the mixture is pulsed. This we do to get a soft puttu.If you don’t want to pulse you can sieve it through a siever.(which my mom does the day before & keeps in the fridge to make things easy the next morning). The puttu mixture is ready.

Meanwhile take some water in a puttu kudam or Pressure cooker and heat it.If u r using pressure cooker,Remove the whistle from the lid and place the cooker on stove.


Now take the puttu maker -the long cylinderical ones or the charatta puttu makers -Place the round Chillu inside and put 1-2 tbsps of grated coconut over it. Then put some puttu mixture over this.again another 2 tbsps of grated coconut.and then again some more puttu mixture and top with grated coconut .Place the top cap and place the puttu maker over the steam coming from the puttu kudam or if you are using pressure cooker place the puttu maker on the top whistle hole (where you put the whistle)from where the steam is coming.Steam this for 3-5 minutes or until nice aroma of cooked puttu comes from the steam.

The cylinderical puttu makers come with a steel/ plastic rods to push the puttu from behind whereas for The charatta puttu makers u just have to remove the top lid and invert them on to a plate.This is how we make the Kerala Puttu which goes well with anything veggie or non veg dishes.But it’s served generally with Kadala Curry along with pappadam .Or simply sprinkle some sugar and eat....or add some mashed bananas and eat.
