Diwali special…..Kaju Katli/Cashew Burfi

Kaju Katli(Cashew Burfi)

1.Cashews-1 cup

Powder this in a mixie.Make sure not to ground smoothly sothat oil seperates .

2.Sugar-1/2 cup

Water-1/4 cup

Boil this together in medium heat till just before the syrup attains one string consistency.

Add the powdered cashews & break the lumps if any are there.

Cook in low flame for 2-3 minutes till a nonsticky dough is formed.When you take a small piece & roll & press between your fingers it should be flexible.

Turn off the stove and add a tsp ghee to this and stir in.Allow it to cool for 5 minutes.Then knead this till a soft dough is formed.

Transfer this to a butter paper & cover with another butter paper & roll it with a roller into 1/4" thickness.Cut into diamond shapes.I got around 20 pieces.
