Bread Bonda with the leftover potato masala
Bread Bonda Recipe
1.Bread-6-8
It’s better to take 2-3 days old breads for this .
Cut out all the four browned sides from each of the breads.
2.Water-as required
Potato Masala-1 cup(see recipe below)
Oil for frying
Take a bread and dip the sides of the bread in water and press it between your palms to squeeze out excess water from the bread.Place 1 -2 tbsps of potato masala in the center and cover it by bringing the diagonally opposite edges over it.Repeat with the other sides too.Join the edges so that the fillings are covered well.Roll it with your palms to shape into balls.
Repeat with the remaining bread pieces too.Heat oil in a kadai and fry the bondas in hot oil till golden brown on all sides.Drain on tissues.Bread Bonda is ready.
Note:Make sure the oil is hot before frying this,otherwise bread Bonda s will be oily.
Recipe for the PotatoMasala/Bhaji
1.Boiled Potatoes-2
Carrot-1
Mash the boiled potatoes and set aside .Chop the carrot.
2.Onions-2
Ginger-a small piece
Garlic-2 (optional)
Green chilies-3-4
Curry leaves-1 sprig
Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Dry Red Chilli-2
Heat 2 tbsps of oil and splutter mustard seeds and then add the urad dal and sauté till browned.Now Add the broken dry chilly.Now Add the curry leaves and then the chopped ginger and garlic (if using) and sauté for a minute.Add the chopped onions and green chilies and sauté till onions turn glossy.
3.turmeric powder-1/2 tsp
Pepper powder-1/4 tsp(optional)
Coriander leaves-few
Lime juice-1/2 a lime
Salt to taste
Add the turmeric powder and pepper powder (use this if your green Chillies aren’t spicy) and sauté.Now Add the chopped carrot ,3 tbsps of water,salt and cover and cook on medium heat till the carrot is cooked through.Add the mashed potatoes and stir in .Adjust salt.Add the chopped coriander leaves & switch off heat.Add the juice of half a lime & stir in. The potato masala is ready.
