Aval and Dried Banana Vilayichathu/ Varattiyathu
Recipe
1.Jaggery-200 gm
Water-1/2 cup
Boil the jaggery with water until it dissolves.Strain this to a wide bottom pan and simmer this till the syrup thickens.
2.Black Sesame seeds-1 tbsp
Cashews-10
Pottu Kadala-1/4 cup
Ghee-1 tbsp
Meanwhile heat ghee and add the sesame seeds and let it splutter.Add the cashews and pottu Kadala and fry this till golden.Set this aside.
3.Aval(Rice flakes)- 1 3/4 cups
Dried Banana-1/2 cup
Coconut grated-1 cup
Cardamom -4-5(crushed)
Add the coconut grated and continue cooking till the mixture thickens a bit.Now add the crushed cardamom,dried banana and only 1 1/4 cups of Aval to this along with the set aside fried items and ghee.Stir this till the jaggery is well coated on the Aval.Add the remaining Aval little at a time till all the syrup is well coated and the Aval is crunchy .Aval Vilayichathu with dried banana is ready.Once this comes to room temperature you can store this in air tight containers.
