Wheat Noolappams/String Hoppers

Wheat String Hoppers (Noolappam/Idiyappam)

1.Wheat flour-1 cup

In a pan or Cheenachatti put the Atta/Wheat flour.On medium heat roast this until a nice aroma comes.This might take around 4-6 minutes.Make sure to stir continuously so that it doesn’t burn or change color.(U can also steam it in a steamer for few minutes)This will help to reduce the stickiness of the Atta/Wheat flour.Off the stove and remove it into a large bowl .

2.Roasted Rice flour-1/2 cup

Salt to taste

Boiling water-as required to make a dough.

Grated coconut-2-3 tbsps

Add the rice flour and salt to the roasted wheat flour and stir.Now pour boiling water to this and make a soft dough.The dough should be moist enough to form small balls without sticking.

Take out some portion of the dough and shape it into logs and fill it into the Idiyappam/Noolappam maker.Lightly Grease the plates or Idli stands with oil in which you are going to make the Idiyappams.

Squeeze the dough into the plates/stands to form medium thick mound of Idiyappam .The Appams shouldn’t be too thick.Top with a pinch of coconut grated.Keep this plates/stands inside the steamer and steam for 7-10 minutes.Once it’s done serve this with egg curry or chicken/Vegetable Stew.
