Summer Rolls/Vietnamese Spring Rolls.
To make the traditional fresh Vietnamese spring rolls,we need
1.rice paper or dried spring roll wrapper
2.thin dried rice noodles
3.leafy lettuce, red or green
herbs, primarily mint. but optionally chives, coriander , whatever you have on hand
4.thinly sliced pork (belly preferred) and boiled shrimp
5.dipped in Nu’oc Châm and peanut dipping sauce.
Vietnamese spring rolls can be made of many different fillings like vermicelli noodles, mint or other herbs, leafy greens, shrimp, pork, shrimp, and other vegetables inside a tight rice paper wrapper.
Cook the deveined prawns by adding them to boiling salted water for 1 1/2-2 minutes .Drain and run under cold water to stop the cooking process.Cut the prawns in half along the body .
Cook the rice noodles according to the package instructions(2-4 minutes).Drain and cool under cold running water, to stop it from cooking further.
Chop the veggies thinly. I used carrot,purple cabbage and capsicum,
Wash the lettuce,mint and coriander leaves and pat dry in a kitchen towel.
When assembling rolls:
When you dip the dried rice paper into the water, it really only needs 1-2 seconds of a quick dip in warm water, then transfer to your rolling surface.
Add lettuce towards the bottom of the rice paper. Leave 1 inches of space on either side of the rice paper.
Add the noodles and spread evenly across and add some peanut sauce over this .
Layer with mint and veggies Try to not add too many items because it will be harder to roll and might tear your rice paper.
Add sliced prawns in the middle of the rice paper with the orange skin facing down.
Now fold the rolls from bottom to cover the veggie mix. Now fold in from both the sides.U want to Keep the roll tight, so lightly squeeze it together as you roll. Continue to roll upwards to complete the spring roll..Vietnamese Spring Rolls is ready.
For Peanut Dipping Sauce
1.Peanut Butter-1/2 cup
Rice Vinegar-2 tbsp
Soya sauce-2-3 tbsp
Brown Sugar-2 tbsp
Lukewarm water-1/2 cup or more
In a bowl mix together sugar and 1/4 cup water,until sugar is dissolved.Add in the remaining ingredients and stir in.
2.Garlic-2
Dry Ginger-1/2-3/4 tsp
Chilli flakes-1/4 -1/2 tsp
Lemon juice-1 tbsp
Sesame oil-2 tsp
Paprika-2 pinches
Crushed peanuts-2 tsp
Add in grated garlic and dry ginger powder,chilli flakes,paprika ,lemon juice sesame oil and stir in.Taste and adjust the flavors to your liking.
Sprinkle some crushed peanuts and chilli flakes on top.Peanut Dipping Sauce is ready..
Nuoc Cham
1.Lukewarm water-1/3 cup
Brown sugar-3 tbsp
Fish sauce-1 1/2 tbsp
Lime juice-1 tbsp
Garlic-1
Thai Chilli-1
In a bowl mix together all the above ingredients .Taste the sauce and adjust seasonings.
Make the sauce before making the rolls so that the flavors have longer time to develop..
