. Vegetable Pulav-2
1.Basmsti Rice-1 1/2 cups
Soak the rice for 15 minutes.Drain and set aside.

Star Anise-1
Jaadi Pathri-1
Shahi jeera/Caraway seeds-1/2 tsp
Cloves-6
Cardamom-4
Cinnamon-2
Fennel seeds-1/4 tsp
In a nonstick pan heat a tbsp of oil and fry the above whole Masalas.Add the set aside drained rice and fry for a minute or two.Remove.
3.Diced vegetables-2 cups(used frozen ones)
Onions-2 chopped
Ginger garlic & green chili paste-3 tbsps
Pudina/Corriander leaves-1/2 cup chopped
Water-3 cups
Coconut milk powder-2-3 tbsps
Salt to taste
Oil-2 tbsps
In a nonstick pan heat oil and fry the onions till it starts to brown.Add the ginger garlic & Chilli paste & Saute.Add the diced vegetables and saute for a minute.
Now add the water and salt and cover & cook till it boils.Add the fried rice and coconut milk powder and cover & cook on low heat till the water dries up.Add in the chopped coriander/mint leaves and stir in.The Vegetable Pulav is ready to serve with some chicken curry or Raita.
