Jackfruit Cake
It’s a jackfruit lovers ultimate cake.Jackfruit Cake made with cooked ripe jackfruit, sweetened coconut, ghee,with touch of cardamom and ginger.The cooked jackfruits give this cake more jackfruit flavor than the jackfruit cake I shared earlier with fresh jackfruit purée and adding Chakka vilayichathu,lends it more softness and Flavor as jackfruit and coconut are match made in heaven.
Jackfruit Cake-2
1.Jackfruit-10
Coconut-1 cup
Jaggery -100 gm
Cardamom-1
Melt Jaggery with water and strain.Heat Jaggery water till it thickens a bit.Add coconut grated and crushed cardamom to this.Once it thickens,add me chopped jackfruit to it and stir in. Off the stove.Let this cool down completely.Chakka vilayichathu is ready.
2.Jackfruit-1 cup
Sugar/Jaggery-1/4 cup
Blend the jackfruit in mixie and cook it along with sugar/Jaggery till it’s cooked and becomes mushy.Set this aside to cool.
U can do this a day before.Chakka preserve is ready.
3.All purpose flour-1 1/2 cup
Baking powder-1 tsp
Baking soda-1/2 tsp
Salt-1/4 tsp
Sieve together and set aside.
3.Cardamom-2
Dry Ginger powder -1/2 tsp
Add to the sieved flour.
4.Eggs -2
Brown Sugar-1/2 cup
Beat the eggs and sugar till doubled and sugar is dissolved.
5.Ghee-2 tbsp (melted)
Canola oil-1/4 cup
Add in the ghee and oil and blend in.
6.Chakka vilayichathu-1/2 cup
Chakka preserve-3/4 cup
Coconut Milk/water-1/4-1/2 cup
Chopped mixed nuts-1/4 cup
Now add in the flour mixture in 3 additions and Chakka vilayichathu & Chakka preserve in two additions,starting and ending with flour. If the batter is thick add 1/4 -1/2 cup coconut milk or water and fold in.Add in the chopped nuts coated with flour into this and fold in.
Pour into a greased pan and bake in a preheated oven at 170 C for 25-30 minutes or until a skewer inserted at the center comes out clean. Mine was ready in 29 minutes.
Note: If your jackfruit isn’t sweet,add 2-3 tbsps more sugar than mentioned.
