Unniyappams with rice flour
1.Raw rice-1 cup
Soak the rice for 3-4 hours.
2.Jaggery-1/2 kg
Dissolve the jaggery by adding 1/2 cup water and then boiling it .Filter this .Set aside to cool.
3.Coconut grated-1/4 cup
Cumin jeera-1/4 tsp
Cardamom-4-5
Grind the rice along with the above ingredients by adding jaggery syrup as required for the mixture to grind.
4.Banana-1 big or 2 small (I used one Chiquita banana)
Add to the above mixture and grind.
5.Maida-1 cup
Rava-1/2 cup
Ina a bowl mix the Rava and maida.Add the ground rice and jaggery mixture to this and mix in.Add the remaining jaggery syrup and enough water to make a batter (loose than the idli batter)
6.Fried small coconut pieces-1/4 cup
Sesame seeds-1 tbsp (optional)
Coconut grated -1/4 cup
Brown the coconut grated by adding a tsp of coconut oil or ghee.
Add the above ingredients to the batter and mix in.set this aside for 1 hour.After 1 hour if the batter is thick add some water to loosen it.
Heat the Unniyappakara with 3/4 oil in each kuyi. In the next stove heat a cheenachatti with oil too.
When the oil is hot pour the batter in each kuyi with a ladle.Once it releases from the kuyi Remove them into the hot oil in the cheenachatti to complete the frying.Once lightly browned on both sides,remove and drain on tissues . (If you cook for long to get the m browned these Unniyappams will be hard once cooled.so remove when lightly browned).The Unniyappam is ready.
