Turkish Pide/Pizzas 🍕 🍕
Pide (pee-day) is the famous baked Turkish flat bread that comes stuffed with a variety of toppings, including cheese, sausage, spiced meat and spinach.
Turkish Pide (recipe 👇🏻)
1.wheat flour-1 cup
all purpose flour-3 1/2 cups
Salt -1 tsp
Oil-2 tbsp[I used Olive oil,u can use any veg.oil]
I used 540 gm flour and 2 tbsp for dusting while rolling the dough .
2.Yeast-2 tsp
Lukewarm milk-1 cup
Sugar-1 tbsp
Lukewarm Water-1/2 cup
Combine milk, sugar and yeast & set aside to rise.When risen,add to items of 1 & form a sticky dough.Knead the dough for 5-7 minutes to get a smooth dough.Transfer this to an oiled bowl & cover & keep to rise. This might take from 1-2 hours depending on how hot/cold your kitchen is.After the dough has doubled,punch it down & divide into 6 pieces.Shape into balls and transfer to baking tray & cover the dough to rise for 40 minutes.
Meanwhile make the filling.
3.Lamb/Beef mince-400 gm
Onion-1 big
Garlic-4 big
Green Chillies-4-5
Olive Oil-2 tbsp
Salt-1 tsp
Vinegar-2 tsp
Turmeric-1/4 tsp
Chili powder-1 tsp
Cumin powder-1 tsp
Pepper powder-3/4-1 tsp
Peri Peri seasoning-1/2 tsp
Sriracha chilli-1/2 tsp
Oregano-1 tsp
Sauté the chopped garlic ,onion and chillies till translucent.Add in the minced meat,vinegar,salt and the spices and cover and cook until meat is cooked through.
4.Tomato paste-3-4 tbsp
Coriander & Parsley leaves-1/4 cup
Add in the tomato paste and stir in.Cook until all the water dries.Adjust seasonings.Off the stove and add in the chopped parsley and coriander leaves.Set this aside to cool.
5..Cottage/Feta Cheese-1 cup
Mozzarella Cheese-2 cup(grated)
Chilli flakes-1 tbsp
Pepper powder-1 tsp
Sumac-1 tbsp
Roll a dough ball into oval shape on a floured surface.Transfer it into baking tray.Place some cheese filling on the edges of the rolled dough and fold in by applying water to the edges.Pinch ends together to seal, then fold the top and bottom in to resemble boats shape.
Fill the boats with the meat mixture and top with cheese Bake in a preheated oven at 200C for 15 minutes or until the crust is golden.
6.Egg-2 (small)
Bake pide for 10 minutes, then crack an egg on top and return to oven for 5 minutes. This applies to all Pide – egg can be added for any of the toppings.
Today I didn’t add the egg to the pide.
