Tender Coconut Pudding

Kerala Pudding/Tender Coconut (Elaneer/Karikku)Pudding

1.Chinagrass-10 gm

Water-1 cup

Cut Chinagrass into small pieces & soak in water for 1/2 an hr.

2.Tender coconut/karikku-2 (1cup)

Karikku water-1/2 cup

Blend this in a mixie without any lumps.

3.Sugar-1/4 cup

Condensed milk -1tin(395gm)

Milk-2 tin

Mix the above items together & heat in medium heat.In another pan heat the soaked Chinagrass also.when this dissolves completely add to the milk mixture & cook till well combined & heated up.Turn off the stove.Add the beaten karikku to the mixture & mix well & pour in the pudding dish & refrigerate till done.decorate with Cherries/Dates chopped
