Stained Glass Cookies are sure to impress people of all ages.These crisp buttery cookies are cut into festive shapes and filled with hard candies, then they’re baked and the candy melts into an even layer for a beautiful stained glass effect.
A delicious cookie to add to the cookie tray this year, and save a few for the Christmas tree or windows..
Stained Glass Cookies (yields-42 cookies)
1.All purpose flour-450 gm
Cornflour-65 gm
Salt-3/4 tsp
Sieve together and set aside.
2.Unsalted Butter-225 gm
Sugar-200 gm
In a large bowl beat together the room temperature butter and sugar till light and creamy.
3.Eggs-2 large
Vanilla essence-1 tsp
Add in the eggs and vanilla and cream again.
Gently fold in the flour mixture in 3 batches with a spatula to get a dough.Divide this into 2 equal parts and cover it with cling wraps and refrigerate for 30 minutes.
Note:U can refrigerate it for overnight or for 3-4 days and let it come to room temperature before rolling and cutting it out into shapes.
4.Hard Candies🍬-30-40 (as required)
Unwrap and separate candies into each color then place in separate small resealable bags. Crush into small bits (not powder) using a meat mallet,set aside.
Once the dough is chilled, roll it out to a 1/4 inch thickness. Cut out a star shape using a medium to large cookie cutter. Transfer cut stars to baking sheet lined with a silicone baking mat or parchment paper.
Cut a smaller star from the center of each and remove .Re-roll and cut scrap dough.
I used flower,hearts,round and star shaped cookie cutters to cut the cookies.
Add the crushed up bits of the candy to the inside of the cookies. Make sure to distribute evenly. Bake the cookies for 10-12 minutes until the edges brown a bit,then let them cool to allow the candy to harden back up.Carefully lift them up with the help of a knife.
Stained Glass cookies are ready to store in air tight containers.
