Eggless and Nonalcoholic Plum Cake
Eggless Plum Cake
1.Dry fruits -3/4 cup
Orange juice-3/4 cup
Apricot/Mixed fruit jam-1 tbsp
Butter-25 gm
In a pan put all the above ingredients and bring to boil.Let it simmer for few minutes. Off the stove and let it cool down completely.
Dry fruits I used are
Kismis-2 tbsp
Raisins-3 tbsp
Tutti fruity-2 tbsp
Dates-5-6
Cranberry-2 tbsp
Candied ginger-1 tbsp
Cherries-4
2.Caramelized syrup-3 tbsps
Cashews,Badam and Pistachios-1/4 cup
Coat the nuts with a tbsp of flour from the flour mentioned below and set aside.
3.All purpose flour-1 cup
Baking powder-1 tsp
Baking soda-1/4 tsp
Spice mix-1 tsp
(I used cardamom,cinnamon,cloves,nutmeg and caraway seeds grounded together with sugar)
Sieve together and set this aside .
4.Thick Curd-1/4 cup
Canola oil-1/4 cup
Milk-3 tbsps
Sugar powder-1/2 cup
Orange zest-1 tsp
Beat together all the above ingredients until sugar is dissolved.Add in the caramel syrup and beat in. Now add in the flour in 2-3 batches and the dry fruits and nuts alternately -starting and ending with flour -with a spatula.
Pour this into a 7” cake tin lined with parchment paper and decorate with some nuts ,tutti fruity and cherries and bake in a preheated oven at 160 C for 50-60 minutes or until a toothpick inserted into the center comes out clean.
