Chakkavaratti(Jackfruit preserve) Cake
1.All purpose flour-150 gm (1 cup)
Baking powder-1 tsp
Baking soda-1/4 tsp
Salt-1/4 tsp
Cardamom powder-1/2 tsp
Fry ginger powder-3/4 tsp
Sieve together thrice and set aside.
2.Eggs-2 large
Vanilla Essence-1 tsp
Granulated Sugar-100 gm (1/2 cup)
Ghee-3 tbsps
Oil-1/4 cup
Melt the butter in the microwave and set aside.
Powder the sugar and add to the room temperature eggs .Beat this adding the vanilla essence till light and fluffy.Add in the ghee and oil and beat in.
3.Thick Chakka varatti/Jackfruit preserve-150 gm(1/2 cup)
Hot water/milk-1/2 cup
Cashews and kismis-few
Add the hot milk/water to the chakka varatti and stir in to dilute it.Set this aside to cool.
Add in the diluted jackfruit mix to the egg mixture and beat in.
Now gently fold in the flour mixture in 2-3 batches,using a spatula .Pour this into a 7” round cake tin greased/lined with parchment paper .
Tap the pan twice on the counter top to remove any air bubbles.Decorate with cashews and kismis on top.Bake in a preheated oven at 170 C for 35-40 minutes or until a skewer inserted at the center comes out clean.
If your cake is browning too much,cover with an aluminum foil ,half way through & until done.
Mine took around 40 minutes to bake.
Allow the cake to cool in the pan for 10-15 minutes.Then carefully remove it to a wire rack to cool completely.Chakka Varatti Cake is ready.
