Soya Pulav


Soya Pulav

1.Basmati Rice-2 cup

Wash and soak the rice in water for 30 minutes.

2.Cardamom-5

Cloves-5

Cinnamon-1/2” piece

Bay leaf-1

Star Anise-1/2

Cumin jeera-1 tsp

Oil-1 tbsp

Heat oil and sauté all the above ingredients till jeera splutters.Drain the soaked rice and fry it for a few minutes.Now transfer this to a pressure cooker.

3.Water-3 cups

Salt to taste

Vegetable stock-1 cube

Add all the above ingredients into the cooker and cook till you hear a whistle.Let it cool.Open the cooker and fluff the rice with a fork.

4.Soya granules-3/4 cup

Boil some water in a vessel.Add a tsp of salt.Once boiled,add the soya granules and allow it to come to boil.Off the stove and let it sit for 15 minutes.Drain and squeeze off excess water.Wash in cold water and squeeze and set aside.

Note : If you are using soya chunks you might need around 2 cups of soya chunks.

4.Onion-2

Garlic-4-5

Ginger-1” piece

Green chillies-4-5

Tomato-2

Oil-2 tbsps

Heat oil and sauté the chopped onion and green chillies.Add the crushed ginger and garlic and sauté.Add the chopped tomatoes and 1/2 tsp salt and cook till the tomato blends.

5.Turmeric powder-1/2 tsp

Chilli powder-1 tsp(adjust according to your spice levels)

Coriander powder-3/4 tsp

Meat Masala-1 tsp

Garam Masala-1 1/2 tsp

Capsicum-1

Add in all the above masalas and sauté for a minute.Add in some water and cook the masalas.Add in the chopped capsicum and the cooked soya granules or soya chunks, some salt and cover and cook on low heat till the soya absorbs the flavors.

Now add the cooked rice to this and mix in without breaking the rice .Add in some chopped coriander leaves and stir in.

Soya Pulav is ready to serve with some Raita,Pappad and pickles or chutney of your choice.
