Soya Chunks Fry (Veg.Beef Fry)

1.Soya Chunks-100 gm

Boil 3 cups water with some salt.Once it starts to boil add the soya Chunks and let this come to boil.Once boiled off the stove and cover the pan with a lid.Let this sit for 15-20 minutes.After 15 minutes the soya Chunks will be double in size.Drain and press it in your palms to remove water.Now add 2 cups of water to this and boil again. This is to remove the smell of Soya which everyone complains about.Once boiled,allow it to cool,uncovered for 10 minutes.Drain and press in your palms to remove water from it.Now cut each Soya Chunk into 2-3 pieces.

2.Chilli powder-1 tsp

Corriander powder-1 tsp

Turmeric powder-1/2 tsp

Salt to taste

Water-1/2 cup

In a pressure cooker put the cut Soya Chunks along with all the above ingredients and cook for a whistle. This we are doing so that the masalas get well coated within the soya Chunks.

3.Onion-1 big

Shallots-4-5

Ginger-1" piece

Garlic-4 Chinese one or 1/2 a pod Kerala one

Green Chilli-3 split

Curry leaves-2 sprigs

Heat 4 tbsps oil and fry the curry leaves and split Chillies.(U can remove this & set it aside to garnish if you want).Add the sliced onions and shallots and saute till it starts to brown.Add Crushed ginger & garlic and saute.

4.Chilli powder-1/2 tsp

Corriander powder-1/4 tsp

Pepper powder-1 tsp

Garamasala-1/2 tsp

Add the Chilli and Corriander powders in medium heat and 2 tbsp water sothat the Masalas don't burn.Once the masalas are cooked,open the cooker and remove the soya Chunks from it to the sautéed masalas .Add the pepper & garamasala and fry this as we do for Beef fry by adding oil if required twice or more 1 tbsp at a time till u get the dark brown color. The Soya Chunks fry is ready to serve with rice or as a snack.
