Pindi and Payar
Ingredients
Red Choura (Vanpayar) -1/2 cup
Pindi/Banana stems (flowers)-3 cups
Onion -1
Garlic (Chinese) -4
Curry leaves -2 sprigs Chilli powder -2-3 tsp
Salt to taste
Method
1 Soak the red choura beans overnight.Cook this with 1/2 cup water (with out adding salt) in a pressure cooker for a whistle.
2 Meanwhile cut the pindi into circles first (removing the outermost covers), discarding the strands that comes along and then into small cubes.
3 Open the cooker & add the 3 cups of chopped pindi to this along with salt and cook for a whistle.
4.Saute the chopped onions,garlic and curry leaves in a tbsp oil. Add the Chilli powder in medium heat. Add little water sothat the chilli doesn't burn.
Once the oil separates open the cooker & add the water,if any is left in it.Cook till the water dries up. Now add the cooked pindi and Payar to this & cook till it's well coated in the masalas.Pindi and Payar is ready to serve
