Paneer Pulav with Pomegranate Raita











Easy Paneer Pulav with Pomegranate Raita

1.Basmati Rice-1 1/2 cup

Clean and soak this with enough water for 20-30 minutes.

2.Mixed Vegetables-2 cup

I used carrot,beans,peas & sweet corns.

3.Cardamom-4

Cloves-7

Cinnamon-1” piece

Pepper corns-6-8

Star Anise-1

Bay leaf-1

Cumin jeera-1 tsp

Ghee/Vegetable oil-2 tbsp

In a pressure cooker heat oil/Ghee and sauté the above whole masalas till the jeera splutters.

4.Paneer-200 gm

I used frozen Paneer.Soak the frozen Paneer in hot water for 20-30 minutes to make it soft and then drain. In a pan heat a tbsp of oil and fry the Paneer till lightly browned.Set this aside.

5.Onions-2

Green chilies -5-6

Coriander leaves-1/4 cup

Garammasala-1 tsp

Salt to taste

Water-2 1/4 cup

Juice of a lime

Now add the onions and green chilies chopped to the whole masalas and sauté till translucent.Add the chopped vegetables, drained rice, and sauté for a minute or two.Now add the set aside Paneer,Coriander leaves,Garammasala and salt and mix in.Add the water and the juice of a lime and close the pressure cooker and cook till a whistle .After half an hour open the cooker and stir with a fork.Easy Paneer Pulav is ready to Serve with Pomegranate Raita or som Pickle of your choice.

Pomegranate Raita

1.Onion-1 big

Salt to taste

Chop the onions and add salt and mix in with your hands.Set this aside for 15-20 minutes.

2.Green chilies-2

Pomegranate-1/2 cup

Curry leaves-a sprig

Yoghurt-1 cup(as required )

Water-1/4 cup(as required)

Now add all the above ingredients to the set aside onions and adjust the thickness of the Raita by adding enough water.Adjust salt.Pomegranate Raita is ready
