Mixed Fruits Pradhaman
1. Ghee-3-4 tbsps
Cashews-15
Kismis-15-25
Heat 2 tbsps ghee in a nonstick pan and fry the cashews.Once it starts to brown add the kismis and let it brown lightly.
2.Apple-1
Apricots-2
Plums-2
Nendra Pazham (Ethakka)-1 big
Dates-1/2 cup(chopped)
Pineapple (vilayichathu)-1/2 cup
Chop all the fruits ( I used around 3 cups fresh fruits chopped)and add to the above except the Pineapple vilayichathu and fry on medium heat till all the fruits are cooked .
3.Jaggery-250 gm
Coconut milk-3 cups (1 cup first milk & 2 cups second milk)
Cardamom-4-5 (crushed)
Boil the Jaggery with 1/2 cup water and filter and set aside.Now add the Jaggery syrup and the remaining ghee and continue to cook until the Jaggery thickens and welll coated .
Add in the second milk of coconut and allow it to thicken a bit.Now add the crushed cardamoms and the first milk of coconut and let the mixture heat through and not boil.Mixed Fruits Pradhaman is ready.
Notes:
1. To make Pineapple Vilayichathu,,
Cook a pineapple by adding equal weights of sugar till thickened.
2.U can use any fruits of your choice .
3. I used Eastern Coconut milk (cans) as first milk. Removed the top thick portion to a cup and then added 3-4 tbsps of coconut milk powder to the remaining watery portions and added extra water to get 2 cups second milk..
4.U can add 1/2 cup hot water or first milk of coconut or even boiled milk to the mixture if your Payasam is too thick.
