Lemon Rice
1.Basmati Rice-1 1/2 cup
Soak the rice for 15 minutes and cook it in a pressure cooker by adding 1 tbsp of ghee/oil,2 1/4 cup water and salt to taste for a whistle.
Note:U can use cooked parboiled rice too to make the Lemon Rice.
2.Ghee/Oil-2 tbsps
Cashews-5
Kismis-10
Mustard Seeds-1 1/2 tsp
Urad Dal-1 tsp
Peanuts-3 tbsps
Dry Red chilies -3
Curry Leaves-2 sprigs
Ginger-1 “ piece
Onions-2
Green chilies 4-6
Heat Ghee and fry the cashews and kismis and set aside.Now splutter the mustard seeds in the remaining oil.Then add the peanuts,urad dal and fry till peanuts are cooked.Add the dry Red chilies,and then the curry leaves and fry.Now add the chopped ginger and sauté for a minute.Then add the chopped onions and green chilies and cook till onions are translucent.
3.Turmeric-3/4 tsp
Salt to taste
Coconut grated-1/2 cup
Lime juice-3 tbsps (2 lime)
Coriander leaves-few
Add the turmeric & salt and sauté for 2 minutes.Add the coconut grated and lime juice to this and stir in.Now add the cooked rice and mix.Add the chopped coriander leaves and the set aside fried cashews and kismis and stir in.Lemon Rice is ready.Serve it with some mango pickle / mango chutney and Raita
