Kumbalanga(Ash Gourd) & Mango Curry
Kumbalanga Manga Curry
1.Kumbalanga/Ash Gourd-1 1/2 cup(roughly chopped)
Muringakka/Drumsticks -1(optional)
Raw Mango-1
Turmeric powder-1/2 tsp
Salt to taste
Cook the Kumbalanga along with 1 cup water,turmeric and salt till it's cooked through.Now Add the cut Drumsticks & the sliced mango pieces and cook.
2.Coconut grated-3/4 cup
Cumin jeera-1/4 tsp
Shallots-3-4
Green Chilli-4-5
Curry leaves-2 sprigs
Meanwhile grind the above ingredients adding enough water to a fine paste.
Once the mangoes are cooked through ,reduce the heat and add the ground paste along with some water to the mixture and a pinch of red chilli powder & mix well.Cook this for 2-3 minutes until the raw smell goes.Set this aside.
For tempering
3.Coconut Oil-2tsp
Mustard seeds-1/2 tsp
Whole red Chillies-2-3
Curry leaves-2 sprigs
Shallots-2-3 sliced
In a small pan heat oil and splutter the mustard.Add the broken red Chillies and sliced shallots & fry till golden.Turn off the stove and add the curry leaves & fry.Now pour this seasoning over the curry & stir in.Kumbalanga Manga curry is ready to
serve with rice.
