Kokkuvada/Ribbon Pakodas/Pakkavada

1.Besan-3 cup

Rice powder-2 cup (Puttu/appam Podi sieved)

Salt to taste

Chilli powder-3 heaped tbsp

Astafoeda-1 tsp

In a bowl mix together the above ingredients.

2.shallots-3 to 4

Grind this to a paste by adding little water. Add to the above and mix.

Now add enough boiling water to this to make a dough.the dough shouldn't be too loose or hard.divide into 5-6 small portions and form logs sothat each fits in the sevai.

Meanwhile heat a cheenachatti with enough oil to deep fry the kokkuvada.

In a sevai put the kokkuvada achu and put in a small dough & press it directly over the hot oil .turn over & fry the other side too..Fry it till the oil stops simmering.Drain on tissues.Once all dough is used up, fry some curry leaves & add to it if you like.Note: I usually add 2 tbsps chilli powder instead of 3 tbsps and grind 10-12 green chillies along with the shallots to a smooth paste and add to the flour mixture as my kids don’t like the dark colored Kokkuvadas.
