Kerala Style Pork and Kaya

1.Pork-1/2kg

Turmeric-1/2 tsp

Chilli pwdr-1tsp

Corriander pwdr -1tsp

Vinegar-1/4 cup

Salt to taste

Marinate the pork with the above ingredients & pressure cook it till done.once cooled,Remove the pork pieces into a bowl.leave the water(stock) behind in the cooker itself.

2.Kaya-1/2 kg

Clean & cut into bite size pieces & add to the stock left in the cooker.add some salt & cook it for one whistle.

3.onion-2 chopped

Ginger-1"piece

Garlic-1 pod

Crush the ginger & garlic.

Curry leaves-2 sprigs

Sauté the curry leaves & onion in 2 tbsp oil.when it turns glossy add the crushed ginger & garlic & sauté.Add

4.chilli pwdr-2 tsp

Corriander pwdr-1 tsp

Open the cooker & pour only the stock along with the pork fat to the above & cook till oil separates .add the cooked pork & then the kaya to this & sauté for few minutes.now add

5.pepper pwdr-1/2 tsp

Garam masala-1/2 tsp

Taste & adjust seasonings.Cook till all the water dries & the masalas are well coated.

6.Coconut grated-4-5 tbsps

Coconut oil-1tsp

Pulse the coconut in a mixie sothat its evenly ground.In a nonstick pan heat oil & roast the pulsed coconut at low heat continuously stirring. Fry this till golden brown.Add to the above & fry in medium heat till the Pork & Kaya is browned like Beef Fry.
