Kerala Style Pork Fry .
1.Pork-1 kg
Chilli powder-1 tbsp
Corriander Powder-2 tsps
Turmeric Powder-1 tsp
Vinegar-1 tbsp
Onion-1
Ginger-1"piece Garlic-1 pod
Salt to taste
In a pressure cooker,combine pork,Chilli,corriander,turmeric,vinegar,salt,chopped onions,crushed ginger & garlic & cook till done.
2.Coconut scrapped-1/2 cup Cardamom-4
Pepper corns-5-7 Cloves-5
Cinnamon-2 big Jeera-1 tsp
Curry leaves-2 sprigs
Meanwhile pulse the grated coconut in the mixie twice sothat it's evenly crushed (not a paste) .In a nonstick pan heat 1 tsp oil & add the crushed coconut & fry.when it starts to change color,add the whole spices & curry leaves and Saute till the coconut is well browned .Browning of coconut should be done on medium heat.also no need to add extra oil as pork stock contains enough oil. keep this aside.
Open the cooker & pour the stock to a wide nonstick pan & cook till water almost dries.no need to add extra oil as pork stock contains enough oil.
Now add the cooked pork into this & half of the fried coconut mixture to it & cook till it starts to brown. 3.Pepper powder-1 1/2 tsp
Garamasala-1/2 tsp
Add the pepper & garamasalas , salt to taste and the remaining browned coconut & continue frying in medium heat till nicely browned.Kerala Style Pork Fry is ready to serve as starter or as a side dish.
