Kerala Banana Chips

Kaya Varuthathu/Banana Chips

1.raw banana (Ethan)-1 kg

Turmeric-2 tbsps

Remove the outer cover of the Ethakka and immediately put them in a vessel of water sothat the bananas don't change color.add the turmeric to this & let this set aside for 20-30 minutes. This is how you get the bright yellow color for the chips.

2.salt-2 tbsps

Water-1/2 cup

Dissolve the salt by stirring .set this aside

3.coconut oil for frying

Curry leaves-5 sprigs

In a cheenachatti add enough oil to deep fry . When the oil is hot fry the curry leaves & drain on tissues.

After 20-30 minutes the bananas will be coated with turmeric & u can remove them into a steel plate/ vessel.

Now with a banana slicer slice a banana directly over the cheenachatti sothat it falls into the hot oil.stir it with a thavi/ ladle sothat it doesn't stick together.It's almost ready when you hear a heavy sound of the chips falling while you turn them with the thavi. Now pour 1/2-1 tsp of the salt water to this & stir it sothat the salt gets evenly coated in the chips.

When you add the salt water there's a huge ish/splutter sound & the oil might splutter to all sides.so take precautions if you r a new comer to chips frying.

Once the ish sound is over gather all the chips with a kiyutha thavi( the one with lots of holes in it) and drain on tissues.

Taste the first batch of chips and adjust/ reduce salt in the next batches as the next batch of chips won't be needing only less salt as the oil might be containing salt from the last batch.

Once all the bananas are fried,mix in the fried curry leaves & once cooled,store in airtight containers

Homemade Kaya Varuthathu/Banana Chips is ready.
