Kappa Varuthathu/Tapioca Chips

1.Kappa/Tapioca-1 kg

Remove the outer brown cover of the Kappa/Tapioca and wash it.Cut this tapioca into 1 1/2 “ pieces.Use a sharp knife or slicer to cut into evenly thin pieces.Spread it out into large plates.

2.Coconut oil-as required for frying

Salt-2 tbsps

Water-1/2 cup

Curry leaves-4-5 sprigs

Dissolve the salt in water and keep it aside.

Heat coconut oil in a kadai/cheenachatti and fry the curry leaves and drain on tissues.Now add some of this sliced tapioca in hot oil and deep fry it making sure to loosen with a knife any slices clumped together.

Once the tapioca slices starts to brown slightly and becomes crispy add a tsp of the set aside salt water to this and mix in with the ladle so that the salt is coated on the crisps.

If you are frying chips for the first time make sure you pour this by keeping enough distance from the Kadai so that the hot oil doesn’t splutter on your hands or body.

Once the spluttering Reduces,Remove the Chips with a slotted spoon and then drain on tissues.Repeat till all the tapioca slices are fried through.Once cooled,store them in air tight containers.Homemade Kappa/Tapioca Chips is ready .

3.Chilli powder as required

To make the spicy version,just sprinkle 1/2-1 tsp of Chilli powder to the hot tapioca Chips and mix it with a spatula /spoon.Once cooled store in air tight containers.

Homemade Spicy Tapioca Chips is ready.
