Jackfruit seeds/Chakkakuru Murukku

Jackfruit Seeds Murukku getting ready.

Chakkakuru/Jackfruit Seeds Murukku (yields 65-70 murukku)

1.Jackfruit seeds-20

Remove the outer cover and soak the seeds in water overnight.Scrape the brown skins off.Pressure cook this,adding enough water until tender . Remove and set aside to cool.

Now grind this without any water to fine powder. This should come to 1 cup jackfruit seeds powder.

2.Rice flour(Pathiri/Appam flour)-1 1/2 cup +2 tbsps

Dry roast the fine rice powder until heated through.

3.Coconut-1/2 cup

Shallots-3

Garlic-2

Add some water and grind all the above ingredients together to a smooth paste.

4.Salt-1/2-3/4 tsp

Boiling water-as required

Sesame seeds-1 tsp

Cumin seeds-1 tsp

Coconut oil-for deep frying

Add the salt and ground jackfruit seeds to the roasted rice flour and mix in. Add in the coconut paste and enough hot water to make a dough.Add in the cumin and sesame and knead together for 3-5 minutes to get a smooth dough.

Put the murukku Achu disc into the noolappam machine .Add 1/4 th portions of the dough into the machine and lock in.

Press it into a plate into 2 1/2-3 rounds to make the murukku.Once 10-15 murukku is done,heat oil in a kadai/cheenachatti.Once it’s hot,add in 6-8 murukku into the oil and fry until lightly browned .Using a slotted spoon remove the fried murukku and drain on tissues.

Repeat until all the dough is used up. I got around 50 small murukku with this recipe. Store the Jackfruit Seeds Murukku in containers.
