Ela/Ila Ada/Valsan(Steamed Rice Pancakes with coconut jaggery fillings)
1.Banana leaves-2
Wash and clean the banana leaves and set aside.
2.For the coconut filling
Jaggery-250 gm
Coconut grated-2 cup
Cardamom-2-3
Boil the jaggery along with 1/4 cup water till jaggery dissolves completely.Filter this syrup into a cheenachatti.Heat the syrup and once it starts to thicken add the coconut grated and cardamom crushed to it.
Once the syrup is well coated onto the coconut off the stove.Allow it to cool.
3.Rice powder-1 1/4 cup
Salt-1/2 tsp
In a steel bowl mix the rice flour & salt .
Add enough boiling water to make a dough similar to iddiyappam dough.
Now remove the thick middle stem from the banana leaves and cut them each into 6 pieces.
Take a small portion of the dough and place it on a piece of banana leaf .Wet your fingers in water and gently spread the dough into a thin layer onto the banana leaf.Place some cooled coconut filling onto onehalf of the Ada and close it with the other half and seal the edges by simply pressing them together.Your Ela Ada is ready for steaming. Do this with the remaining dough and filling until all the dough & filling is used up . You will get 8-10 Ela Adas with the above mentioned ingredients.
Take a steamer and add 2-3 cups water to it.Heat it.Once the steam comes out keep the Ela Adas on the steamer and steam for 15-30 minutes or until the Ada is cooked through.Serve as evening snack.
