Egg Aval/Anda Poha

Egg Aval/Anda Poha for Breakfast

Egg Aval (Serves 3 people)

1.Mustard seeds-1/2 tsp

Coconut oil-1 tbsp

Onion-1 big

Green Chillies-3-4

Capsicum-1/2

Tomato-1/2

Turmeric powder-1/4 tsp

Pepper powder-3/4-1 tsp

Garam masala-1 tsp

Heat oil and splutter the mustard seeds .Then add the chopped onions and green chillies and sauté till onions are glossy.

Now add the turmeric,pepper powder and garam masala and sauté.Then add the chopped tomato & capsicum and sauté for a minute. It should be firm and not mushy.

2.Aval/Rice Flakes/Poha-2 cup

Add water to the Aval and wash once and let it drain.Don’t allow it to soak.

3.Eggs-2

Salt to taste

Coriander leaves-few

Add the salt and beaten eggs to this and cook till the eggs are scrambled and not fully cooked/dried.Now add the drained Aval/Poha to this and stir in .Cook till the poha is heated through .Off the stove and add the juice of half a lime and adjust salt.Add the coriander leaves chopped and mix in .Egg Aval/Anda Poha is ready.


Note:U can add any vegetables to this to make it more healthy.

U can increase the amount of eggs to 3 if you want.

U can use chilli flakes/Chilli powder to make it spicy and reduce the pepper powder to half instead.

U can add fried peanuts to garnish.
