Easy Vellayappams(yields 25-28 no.’s ….serves 4-5 people)
1.Rice powder-1 cup
Rice flakes/Aval-1/2 cup
I used roasted rice powder.Wash the rice flakes and set aside.
2.Coconut grated-1/2 cup
Shallots-2-3
Cumin jeera-1/4 tsp
Sugar-3 tbsps
Yeast-1/2 tsp
Salt to taste
Warm water-as required
Add all the above ingredients,rice flakes and rice powder into a mixie and grind to a smooth paste.Set this aside for an hour or two for the mixture to rise.Once risen,make Vellayappams by pouring a small ladle of batter each onto a nonstick Tava.Cover this with a lid and cook till lightly browned at the bottom.Flip it over and cook without lid for few seconds and remove to a plate.Vellayappams are ready.If you are using a big Tava,u can make 3-4 Vellayappams at a time.Serve this with some vegetable or nonveg Curry of your choice.
