Easy Achappams (with rice powder)

Easy Achappams /Rose Cookies (with rice powder).

1.Rice powder-2 cups

Maida-2-3 tbsps

Sugar-1/2 cup

Egg-1 (medium size)

Salt-1/2 tsp

Vanilla Essence-1 tsp

I used raw rice powder.U can use store bought roasted rice powder (Appam/Pathiri powder) instead.Put all the above ingredients into the large bowl of the mixie.

2.Coconut milk-1 1/2 cup

Water -1/4 cup (as required)

I used 3 tbsps coconut milk powder dissolved in 1 1/4 cup water and used it instead of coconut milk.

Add the 1 cup coconut milk to the mixie and blend it.Now add the remaining coconut milk and water as required to make a somewhat loose batter .Add in a tbsp of Sesame seeds and mix in.Achappam Batter is ready.Pour this into a deep vessel.

Heat enough coconut oil in a cheenachatti/ kadai and put the Achu in it .Once this Achu is hot just dip it in the above Achappam batter and fry in the hot oil.

Achappams will release into the oil .Allow the Achu to get heated after each time before dipping it in the batter,which makes the batter cling onto the Achu.Once lightly browned turn them over and fry till golden.Use a fork or slotted spoon to remove it from the oil.Drain on tissues. Repeat till all the batter is used up.U can get around 40-45 Achappams from this batter.Today I used a nonstick Achappam maker to make this.
