Doodhi/Lauki/Bottle Gourd Halwa

1.Doodhi/Lauki/Bottle Gourd grated-6 cups

Ghee-2 -3 tbsps

Cashews/Abadan-4-5

Kismis-8-10

Heat ghee in a nonstick kadai/pan and fry the cashews broken and kismis till golden.Remove & set aside.Now add the grated bottle gourds/doodhi and sauté on medium flame for 3-4 minutes.

2.Milk-1 cup(250 ml)

Sugar-1-1 1/2 cups (adjust according to your sweet levels)

Green color-2-3 drops(optional)

Cardamom-2-3(crushed)

Unsweetened Khoya/Mawa-1/2 cup

Add the milk and color (If u are using....I wanted to give a nice color to the halwa so added it)and cover and cook till the milk has been absorbed.Add the sugar. I used only one cup as I didn’t want it to be too sweet.U can add the extra sugar if you want it sweeter.

Once the sugar melts and the mixture has thickened a bit,add

the crumbled mawa to this .Cook this a little bit more till the mixture has thickened.Now add the set aside fried nuts to this.This Halwa is served as it is or along with ice creams.
