Dilkush (Sweet Coconut Stuffed) Bread/Bun
For the dough
1.Milk-1/2 cup
Sugar-5 tbsps
Yeast-1 tbsp
Heat milk till lukewarm.add the sugar and yeast & set aside to rise.
2.All purpose flour-2 1/2 cups and 3 tbsps for rolling out the dough
Melted butter-2 tbsps
Salt -1/2 tsp
Mix together and make a well in the middle & add the risen yeast mixture to this & knead well for 5-7 minutes.Apply olive/refined oil on the dough and place in a greased bowl to double in size.
For the sweet filling
3.Coconut scraped-1/2 cup
Raspberry/ Strawberry jam-3-4 tbsps (I used a mix of strawberry & homemade banana jams)
Tutti fruity-1/2 cup
Cashews,raisins etc-1/2 cup
Sugar-1/4 cup
In a mixie grind the coconut coarsely without adding water. Remove into a bowl and add the sugar,tutti fruity,chopped nuts,raisins and jam & stir well to mix.Set this aside. The filling is very addictive,so keep an eye on it sothat your husband and kids finish it off while the dough is rising.
U can make another filling which I have tasted in Alleppey Brufea bakery which they call banana bun which is as follows
1.coconut grated-1 cup
Sugar-1/2 cup
Cardamom-3
Banana (Ethan)-1
Heat the chopped banana ,coconut & sugar till the sugar coats the coconut & banana is slightly cooked. Add the ground cardamom to this & set this aside to cool.
Once the dough has doubled ,punch & knead & divide into 3 equal parts.
Roll into large and not so thin chappathi's often dusting with flour. I rolled my chappathi's on parchment papers.
Place the filling evenly on one chappathi and place another one over the filling & press the edges to seal.slightly roll on the Dilkush ,sothat it becomes even.
Now take the third part & roll into thin chappathi.Cut into 1/2 inch pieces with a pizza cutter.Now weave this as shown in a parchment paper and carefully invert it on top of the Dilkush.Cut off any long edges and tuck in the edges under the bread to give a clean finish.
Pierce some holes in the bread sothat the steam escapes when baking.
4.egg-1
Water-1 tbsp
Beat together and brush on top(u can use milk also for brushing).
Bake in a preheated oven at 190 C for 20-25 minutes until the top is nice and golden brown.Mine took around 21 -22 minutes.The dark brown color is
Cause I went to rest and forgot to check in between & removed at 24 minutes . The aroma of freshly baked bread and butter and the filling was lingering in my house for 3-4 hours after baking this beautiful & sweet bun.
