Diamond Cuts
1.All purpose flour-2 cup
Dalda/Ghee-1 tbsp
Salt-1 tsp
Sugar-2-3 tbsps
Sesame seeds-1 tbsp
Baking Soda-a pinch
Put all the above ingredients in a vessel and mix with your hands to make a crumbs.
2.Egg-1
Milk-1/2 cup
Add the egg and mix in.Add the milk little at a time and mix in to get a stiff dough.Knead this for 5 minutes.Rest this dough for 20-30 minutes well covered.
Divide into 4 parts and make balls.Roll each dough into thin rounds using flour as required.Cut the rounds into 1/2 “ strips vertically.Now slice each strip into 1/2” pieces to resemble diamond shapes.Repeat with the remaining dough.
Deep fry this in hot oil in batches till browned and crispy.Remove.Repeat till all the pieces are fried through.Drain on tissues and store in containers.Diamond Cuts is ready.
For the sweet version
3.Sugar -1 cup
Water-1/4 cup
Cardamom powder-3 (crushed)
Bring this to boil and cook till the syrup attains one string consistency.Reduce the heat and add the cooled diamond cuts and mix in till all the diamond cuts are well coated with the sugar syrup.
