Njandu /Crab Roast
1.Onion-2 big
Curry leaves-2 sprigs
Shallots-4-5
Ginger-1” piece
Garlic-5-6 big
Green chillies-2
Heat oil and sauté onions and curry leaves,chopped till lightly browned.Add in the shallots,ginger garlic,& chillies crushed to this and sauté.
2.Tomato-2
Chilli powder-1 tbsp
Coriander powder-1 tbsp
Turmeric powder-1 tsp
Pepper powder-1/2 -3/4 tsp
Fennel powder-1/2 tsp
Now add in all the above masalas and sauté for a minute on low heat.Add in some water and cook till oil separates.Add chopped tomatoes and salt and cook till tomato blends.
3. Crabs-600 gm
Salt to taste
Now add in the cleaned crab pieces ,some more salt and 1 cup water and cover and cook till it’s cooked (around 10-12 minutes).
Open the lids and cook till the gravy thickens and the crabs are well coated with the masalas.
Note: u can add 1/2 cup coconut milk to this towards the end to thin it out.
