Chole Pav with homemade Pav Bhaji Masala

For the Pav bhaji masala
1.Black cardamom-2
Cinnamon-2" piece
Cloves-6
Cumin jeera-2 tbsp
Black Pepper corns-2 tsp
Fennel seeds (saunf)-3/4 tsp
Corriander seeds-4 tbsp
Whole red dry Chilli-5
Amchur( dry mango)powder -1 tbsp
Dry roast together all the above ingredients except amchur powder.Add amchur powder to the hot ingredients to release it's aroma.Once cool powder in a grinder.Store the masala in glass jar. This can be kept in fridge for 6 months.
For the gravy
2.Mustard seeds-1 tsp
Ginger-1/2 " piece
Garlic-3-4(Chinese)
Curry leaves-5-6
Green chili-3
Butter/ oil-2 tbsps
In a kadai heat oil & splutter the mustard. Add the chopped ginger,garlic,curry leaves & saute for a minute. Add the chopped onion and Chillies .
Once translucent add the following masalas
3.turmeric powder-1/4 tsp
Chilli powder-1 heaped tsp
Corriander powder-1 heaped tsp
Pav bhaji masala-2 tsp
Add 1/4 cup water sothat the masalas don't burn.Cook till oil separates.
4.Kabuli Chana(white chickpeas)-1 cup
Soak this for 5-6 hours or overnight.
Potato-1 medium
Remove skin and cut into 4.
Pressure cook the Chana & potato with the soaked water for a whistle. Set this aside.
5.Tomato paste-2 tbsps
( u can use 2 tomatoes chopped instead)
Salt to taste (If you have black salt use it)
If you r using fresh tomatoes add it now & cook till the tomatoes blend well.
Add the cooked chickpeas and potato (mash it & add) along with tomato paste if you r using the paste.
Cook this till the gravy thickens .Off the stove.
6.onion-1 small
Corriander leaves-1/4 cup
Butter-1-2 tsp
Lime juice from one lime(Indian)
Add the chopped onion ,Corriander leaves ,butter and lime juice before serving.
This Chole goes well with buttered Pav or chappathi's
