Chicken Spring Rolls-2

A.For the Filling

1.Chicken -4 to 5 pieces[U can use 6-8 Sausages instead].

Cook the chicken with a pinch of turmeric,1/2 tsp chillipowder,1/4 tsp pepper powder & salt.Let this cool.Debone & shred the chicken.

[If u r using Sausage,chop it into small slices]

2.Cabbage-1/2 cup

Carrot-1

Beans-1/2 cup

Onions-2

Ginger-a small piece

Garlic-5

Green chillies-4

Chilli flakes-1 1/2 tsp .

Pepper powder-3/4 tsp

Saute the chopped onions,ginger,garlic & green chillies.Add the masalas & saute till raw smell goes.Now add the chopped veggies & salt & cover & cook on medium heat till done.Add the shredded Chicken/Sausage .

3.Soya sauce-1 1/2 tbsps

Thai Chilli sauce-2 tbsps

Cooked noodle-1 packet

Salt to taste

Add the sauces & Saute for a minute.add the cooked noodles & adjust seasonings.set this aside to cool.

B.For the wrap

4.Eggs-2

All purpose flour-1 1/2 cups

Corn flour-4 tbsps

Salt a pinch

Water as required

Meanwhile beat the eggs & salt & add the flour & mix.now add water little at a time & make a thin batter(Dosa batter).

Heat a nonstick pan and pour a ladle of batter & make thin crepes/ dosas on medium heat.once it's done on one side,flip it on to a plate.No need to cook the other side.Once all the batter is used up u can place a big spoon full filling on the cooked side of the crepes & roll half way through.fold the top & bottoms as shown in pictures..

C.For coating/dusting

6.Egg-1

Water-1 tbsp

Breadcrumb as required

Beat together the egg & water in a wide bottom dish.dip the rolls one by one in this & dust in breadcrumbs.repeat this with all the rolls.

Heat oil in a kadai & deep fry the rolls 2 or 3 at a time.drain on tissues.Serve with your favorite sauce .
