Chewy Chocolate chip Oatmeal Cookies(yields 21 cookies)
1.Unsalted Butter-1/2 cup(113 gm)
White Sugar-1/4 cup
Packed light Brown Sugar-1/2 cup
Cream together the butter and sugar with a wooden spoon or beater until smooth.
2.Egg-1
Vanilla essence-1 tsp
Add to the above and beat well.
3.All purpose flour/maida-1/2 cup & 2 tbsps
Salt-1/2 tsp
Baking Soda-1/4 tsp
Combine the above dry ingredients and add to the above.Mix in.
4.Quick cooking Oats-1/2 cup
Walnuts and Cashews chopped -1/2 cup(together)
Semi Sweet Chocolate Chips-1/2 cup
Add to the above and stir in.
Keep the dough refrigerated for atleast half an hour.(This is done to prevent the cookies from spreading while baking).
Drop by tablespoonfuls onto ungreased baking sheets and bake in a preheated oven at 170 C for 12 minutes or until the sides starts to brown.Remove and allow the cookies to cool in the tray for 5 minutes. Then remove the cookies onto the cake rack and allow to cool completely.Store in airtight containers.Yields around 21 cookies 🍪.
With dark brown sugar I got this dark color for the cookies.
