Cherry & Pistachio Biscotti
1.Eggs-2
Olive oil-2 tbsps
Sugar granules-2/3 cup
Orange essence-1 tsp
Beat together till fluffy.
2.All purpose flour-1 3/4 cup & extra 1/2 cup for dusting
Baking Powder-1 tsp
Salt-1/4 tsp
Mix together and add to the above.
3.Pista-1/2 cup
Cherry (dry)-1/2 cup
(U can use almonds & cranberry or kismis & walnuts or tutti fruiti and cashews instead of pistachio & cherry)
Chop the pistachio & cherry &
Add to the above .You will get a sticky dough.
Transfer this dough to the floured countertop & knead by adding enough flour till you get a pliable dough.(I used 1/2 cup flour).
Divide the dough equally & form two logs .Place the logs on an oiled parchment paper 2-3" apart.Punch the dough sothat it is rectangular in shape.Do the same with the other log.Bake this in a preheated oven at 175 C for 25-30 minutes lightly browned and firm to touch.
Remove from oven and let it cool for 15 minutes.Cut each log slanting into 1/2" thick slices and arrange them as seen in the picture and bake for another 7-8 minutes at 140 C on each side.
