Chakkakuru Unda (Jackfruit Seeds Balls)Recipe
1.Chakkakuru-125 gm ( with Cover)
Remove the white outer cover of Chakkakuru and soak in water for 4-5 hours.Scrape the brown part after soaking.Pressure cook this with 1/2 cup water and 1/4 tsp salt for a whistle.
Once cooled,drain and place them on kitchen tissues to remove excess water.Now pulse this in a mixie till ground.This mixture should be 1 cup.
2.Jaggery syrup-1/2 cup
Coconut grated-1/2 cup
Cashews-5 (broken into small pieces)
Dry Roasted Rice powdered-4-6 tbsps
Cardamom crushed-1
In a cheenachatti/kadai pour the jaggery syrup and heat it.Once it is of one string consistency add the coconut grated and let it simmer for a few minutes.Add crushed cardamom and broken cashews and switch off the stove.
Add the ground Chakkakuru to this jaggery & coconut mixture and mix. Mash with the back of a spoon if there’s big chunks.Now add a tbsp of Roasted rice powdered at a time and mix .U might require 2-3 tbsps of Roasted rice powdered for the mixture to come together.
Make small balls with the mixture and roll it out in the remaining roasted rice powdered to smoothen it.Chakkakuru Unda is ready. I got 18 small Unda/balls with this.
