Jackfruit /Chakka Cake (with oil))-1
1.Granulated Sugar-1/2 cup
Water-1/4 cup
In a heavy bottom vessel or nonstick pan add the sugar and heat it on low flame.When sugar starts to melt,tilt the pan and let it dissolve completely .Stir In with a spoon and let it brown evenly .Once it attains brown color,add the water and let it come to boil.Add 1 tbsp of butter and off the stove and allow the mixture to cool down.
2.All purpose flour-1 cup
Corn flour-2 tbsps
Baking powder-1 tsp
Baking soda-1/4 tsp
Salt-a pinch
Sieve together thrice and set aside.
3.Granulated Sugar-1/2 cup
Cloves-4
Grind the above together till powdered.
4.Eggs-2
Vanilla essence-1 tsp
Refined oil-1/2 cup
Beat the eggs,sugar powder and vanilla till light and fluffy or almost tripled in volume
.Add in the oil and beat in.
5.Jackfruit/Chakka-10 pieces
Grind this to a paste (around 1/2 cup).I added 2 tbsps chopped chakka too .
Now fold in the sieved flour mixture in 3 batches using a spatula.
7.Cashews & Pistachios-1/4 cup
Add in the broken nuts and fold in.
Pour this into an 7 or 8” greased and floured round cake tin and decorate with some Cashews on top.
Bake this in a preheated oven at 170 C for 40-45 minutes or until a skewer inserted at the center comes clean.
