Chaipeedika Style Pazham Pori (Coffee/Tea Shop Style Banana
Fritters)
1.Egg-1
Sugar -2-4 tbsps (depends on the sweetness of the Ethakka u use)
Vanilla Essence-1/2 tsp
Or
Cardamom powder -1/4 tsp
Beat the egg & sugar with a fork until sugar dissolves.Add vanilla/cardamom powder .
2.All purpose flour-1 cup
Rice Flour-1/4 cup
Baking powder-a pinch
Salt -1/4 tsp
Turmeric-1:4 tsp(optional)
Water as required
I don’t like my banana fritters to have the yellow color so omitted it.
Add all the above ingredients into the egg mixture and stir in.Now add the water to make a thick batter (The batter shouldn’t fall so easily from the fork when dropping). It might take around 3/4 cup of water to get this consistency.
Another way to make the batter is to put all the ingredients into a mixie and blend it.
3.Ethakka(Kerala Banana (Nendra Pazham)-3-4(big)
Oil -as required for frying
Cut each banana into half or three horizontally and then slice each into four slices.
Heat oil in a cheenachatti/kadai.Dip the sliced bananas in the batter and drop it into hot oil.Once the bananas are dropped into the oil,reduce the heat to medium and fry it till golden.This will ensue the bananas are cooked well.Increase the heat to high and then remove the fried bananas so that it doesn’t absorb too much oil.(Make sure the heat is on high when you drop the bananas and while removing the fried ones.)Repeat this till all the bananas are fried.
If there’s any leftover batter,you can fry it as such by dropping them with a spoon into the hot oil.
