Beetroot Burfi
1.Beetroot grated-1/2 cup
Coconut grated-1/2 cup
Ghee-1 tsp
Cashews-5-6
Heat ghee in a pan and fry the cashews broken till lightly browned.Remove and set aside.
Now add the grated beetroot and sauté on low heat for few minutes.Add in the grated coconut and little water and cover and cook till beetroot is cooked through.
2.Sugar-1 cup
Cardamom powder-1/4 tsp
Meanwhile grease a steel plate with ghee and set aside.
Add in the sugar and cardamom powder cook till it comes together as a mass.Continue cooking till it starts to leave the sides of the pan.Add the set aside cashews and stir in.Immediately transfer this mixture to
the greased plate and smooth the top with a steel bowl or back of a spoon.
Cut into squares with a knife when it’s still warm.Beetroot Burfi is ready.
