Beef Biryani


Beef Biryani

1.Beef-300 gm

Onions-2 big

Ginger-1” piece

Garlic-5-8 large

Green chillies-10

Tomato-2

Turmeric-1/2 tsp

Chilli Powder-1 1/2 tsp

Coriander powder-1/2 tsp (optional)

Cinnamon-1/2” piece

Cardamom-2-3

Cloves-3-4

Salt to taste

Vinegar/Lime juice-1 tbsp

Coconut oil-1 tbsp

Chop the onions and tomatoes.Crush the ginger,garlic and green chillies.Add to the beef and mix in.

Marinate the beef pieces with all the above ingredients for at least 30 minutes.

Pressure cook this for 2-3 whistles or until the beef is cooked through.

2.Basmati Rice-2 cups

Cardamom-3

Cloves-3-4

Cinnamon-1/2” piece

Whole Pepper-5-6

Star Anise-1

Bay leaf-1 big

Fennel seeds-1 tbsp

Cumin jeera-1 tsp

Olive oil/Ghee-1 1/2 tbsp

Water-as required

Salt to taste

Wash and soak the rice for 30 minutes.Drain.Heat ghee/oil and sauté the whole masalas till it pops.Add in the fennel and cumin seeds.Add in the drained rice and sauté for 2 minutes.

Meanwhile remove the cooked beef from the cooker and strain the stocks.Measure the stocks and add in extra water to make 3 cups .

Transfer the rice,salt and the stocks & water to the cooker and cook it for a whistle.Once cooled,open the cooker and fluff it with a fork.

3.Onions-2

Coriander leaves-1/2 cup

Mint leaves-1/2 cup

Yoghurt-1/2 cup

Pepper powder-3/4-1 tsp

Garam Masala-1 1/2 tsp

Lime juice-1 tbsp

Slice the onions and fry till golden brown.Add in the cashews and kismis and fry till golden.Set this aside.Chop the coriander and mint leaves.

In a nonstick pan or Kadai,add the cooked beef,half of the fried onions,whisked yoghurt,pepper & Garam masalas and sauté in low heat.Add in 3/4 th of the chopped coriander & mint leaves and stir in.Adjust seasonings.When this thickens add in the lime juice and set aside.

Layering the Biryani For Dum

Put a tbsp of ghee to the pan and spread it out.Add the 1/2 of the beef mixture above this.Then spread evenly half of the cooked rice over this.Sprinkle some chopped coriander & leaves and fried onions,cashews and kismis over this.Repeat another layer of beef mixture and then rice and the fried onions and chopped leaves .Cover the pan with lid and place it on low heat for 10-15 minutes.

Beef Biryani is ready to serve with some raita,pickles and pappadam
