Beans Biscuit (Kerala Mutta Biscuit )

This one is the most famous and favorite biscuits of my childhood and was one of the best available those days. It was called the beans biscuits or coin biscuits .Anyone from Kerala could nostalgically connect with these Biscuits. It’s one of my kids favorite too. They will always make sure to parcel a packet of this Beans Biscuits whenever

We returned after the summer holidays from Kerala.

Beans Biscuit Recipe

1.Eggs-2

Granulated Sugar -5 tbsps ( powder this)

Vanilla essence-1/2 tsp

Butter-2 tbsp (melt this)

Beat together all the above ingredients in a bowl with a fork/whisk till sugar is dissolved.

2.All purpose flour-3/4 cup

Baking powder-1/2 tsp

Salt-a small pinch

Mix together the above ingredients in a bowl.Now Add to the above in 2 additions and stir in.Transfer this to a piping bag/plastic cone/freezer bags.Cut off the end of the cones and pipe small drops of this batter to the trays lined with parchment paper.

Bake this in a preheated oven at 150 C for 10-12 minutes or until the edges brown slightly . Mine small tray took exactly 10 minutes and the big one 12 minutes.

Note:Pipe exactly equal amounts of batter so that they are evenly baked. In case if you find out that some big biscuits are not crispy,bake those biscuits for a second time for a few more minutes
